Aroma: Black cherry with hints of cinnamon and fine white pepper
Palate: Lovely sweet cherry and cream. Nice structure, good length. Soft finish persists in the mouth. Well integrated ripe tannins.
Winemaking: Each parcel of fruit is gently crushed into small open fermenters with traditional heading down boards where fermentation is carried out under strictly controlled temperature conditions. Gentle extraction is achieved by the daily draining away of wine from the skins and then returning back over. The wine is then pressed and returned to stainless steel tanks. French oak staves used to add complexity.
